Preparing the Carnitas

Prepare the Pork
Cut the pork shoulder into large chunks (about 2-3 inches each) and season with salt, black pepper, cumin, and oregano.

Add Ingredients to Slow Cooker
Place the seasoned pork in a slow cooker. Add the orange juice, lime juice, garlic cloves (smashed), onion (quartered), bay leaves, and water.

Cover the slow cooker and cook on low for 8-10 hours or high for 4-5 hours until the pork is very tender and shreds easily.

Once cooked, remove the pork from the slow cooker and shred it using two forks. Discard any excess fat and the bay leaves.

For crispy carnitas, spread the shredded pork on a baking sheet and broil in the oven for 5-7 minutes, until the edges are browned and crispy.
