Method

Preparing the Carnitas

  1. 1

    Prepare the Pork

Cut the pork shoulder into large chunks (about 2-3 inches each) and season with salt, black pepper, cumin, and oregano.

  2. 2

    Add Ingredients to Slow Cooker

Place the seasoned pork in a slow cooker. Add the orange juice, lime juice, garlic cloves (smashed), onion (quartered), bay leaves, and water.

  3. 3

    Cook the Carnitas

Cover the slow cooker and cook on low for 8-10 hours or high for 4-5 hours until the pork is very tender and shreds easily.

  4. 4

    Shred the Meat

Once cooked, remove the pork from the slow cooker and shred it using two forks. Discard any excess fat and the bay leaves.

  5. 5

    Crisp the Carnitas

For crispy carnitas, spread the shredded pork on a baking sheet and broil in the oven for 5-7 minutes, until the edges are browned and crispy.

Serving the Plate

  1. 6

    Prepare Toppings

Chop the fresh cilantro and red onion, and prepare lime wedges. Set aside.

  2. 7

    Warm the Tortillas

Heat the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side until warm and pliable.

  3. 8

    Assemble the Plate

Serve the crispy carnitas on a plate with warm tortillas and a variety of toppings including cilantro, red onion, lime wedges, sour cream, and guacamole.
