Marinade

Beef

Method

Marinating the Beef

  1. 1

    Prepare Marinade

In a large bowl, combine chopped cilantro, lime juice, minced garlic, olive oil, cumin, salt, black pepper, and chili powder. Mix well to create a marinade.

  2. 2

    Marinate the Flank Steak

Place the flank steak in a resealable plastic bag or a shallow dish. Pour the marinade over the steak, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, or preferably overnight for better flavor.

Cooking the Beef

  1. 3

    Preheat Grill

Preheat your grill to medium-high heat.

  2. 4

    Grill the Steak

Remove the flank steak from the marinade and discard the marinade. Grill the steak for about 6-8 minutes on each side, or until it reaches your desired level of doneness (medium-rare is about 135°F).

  3. 5

    Rest the Steak

Once cooked, transfer the steak to a cutting board and let it rest for 5-10 minutes before slicing.

Preparing the Plate

  1. 6

    Slice the Steak

Thinly slice the rested flank steak against the grain.

  2. 7

    Warm Tortillas

Heat the corn tortillas on the grill or in a skillet for about 30 seconds on each side until warm.

  3. 8

    Assemble the Plate

On a large plate, serve the sliced carne asada alongside warm corn tortillas, pico de gallo, guacamole, refried beans, and a dollop of sour cream.
