Method

Preparing the Burrito Filling

    Cook the Ground Beef

    In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.

    Stir in the taco seasoning and black beans. Cook for an additional 3-4 minutes until well combined.

    Mix in Rice and Cheese

    Add the cooked rice and shredded cheese to the skillet. Stir until the cheese is melted and everything is well mixed.

    Add Sour Cream and Cilantro

    Remove from heat and mix in sour cream and chopped cilantro until well combined.

Making the Enchilada Sauce

    Combine Sauce Ingredients

    In a medium saucepan, add tomato sauce, chili powder, garlic powder, cumin, onion powder, water, and salt.

    Simmer the Sauce

    Bring the mixture to a simmer over medium heat. Cook for about 10 minutes, stirring occasionally.

Assembling and Baking

    Fill the Tortillas

    Lay out the tortillas and place a generous amount of the burrito filling in the center of each. Fold in the sides and roll tightly.

    Preheat the oven to 350°F (175°C). Spread a thin layer of the enchilada sauce on the bottom of a baking dish.

    Place the rolled burritos seam side down in the baking dish. Pour the remaining enchilada sauce over the burritos.
