Marinade Preparation

    Prepare the Chiles

    Remove stems and seeds from dried guajillo and ancho chiles. Rinse them under warm water for a few minutes to soften.

    Blend Marinade

    In a blender, combine softened chiles, garlic cloves, white vinegar, cumin powder, oregano, salt, black pepper, and brown sugar. Blend until smooth.

Pork Preparation

    Marinate the Pork

    Cut the pork shoulder into large chunks. Place in a bowl and coat thoroughly with the prepared marinade. Cover and refrigerate for at least 4 hours, ideally overnight.

    Preheat the oven to 300°F (150°C). Heat canola oil in a large oven-safe skillet over medium-high heat. Sear the marinated pork chunks on all sides until browned, about 5-7 minutes.

    Cover the skillet with a lid or aluminum foil and transfer to the preheated oven. Roast for 2.5 to 3 hours, until the pork is tender and easily pulls apart with a fork.

Serving

    Warm the corn tortillas in a skillet over medium heat for about 30 seconds on each side, or until pliable.
