Trim excess fat from the pork shoulder and cut it into large chunks. Rub salt over the pieces to ensure they are well seasoned.

Blend the Marinade
Transfer softened chiles and other ingredients to a blender. Add apple cider vinegar and orange juice. Blend until smooth, adding more water if necessary to achieve a pourable consistency.

Place the pork chunks in a large bowl or zip-top bag. Pour the marinade over the pork, ensuring all pieces are well coated. Seal and refrigerate for at least 4 hours, preferably overnight.
