    Prepare the Pork

    Trim excess fat from the pork shoulder and cut it into large chunks. Rub salt over the pieces to ensure they are well seasoned.

    Prepare the Marinade

    Remove stems and seeds from the guajillo and ancho chiles. In a saucepan, add chiles, garlic, cumin seeds, oregano, black pepper, and sugar. Pour in 1 cup of water and bring to a simmer for about 10 minutes until the chiles are softened.

    Blend the Marinade

    Transfer softened chiles and other ingredients to a blender. Add apple cider vinegar and orange juice. Blend until smooth, adding more water if necessary to achieve a pourable consistency.

    Marinate the Pork

    Place the pork chunks in a large bowl or zip-top bag. Pour the marinade over the pork, ensuring all pieces are well coated. Seal and refrigerate for at least 4 hours, preferably overnight.

Cooking

    Preheat the Oven

    Preheat your oven to 325°F (163°C).

    Place the marinated pork in a baking dish, cover with foil, and bake for 2.5 to 3 hours or until the pork is tender and easily shredded.

    Remove the pork from the oven and let it rest for 15 minutes. Then, shred the pork using two forks.

Serving

    Serve the Adobada

    Place the shredded adobada in a serving dish. Top with chopped onions, cilantro, and serve with lime wedges on the side.
