Cook the Meat
In a large skillet over medium heat, add the ground chicken or beef and cook until browned, breaking it apart with a spatula, about 5-7 minutes.

Season the Meat
Add the taco seasoning to the skillet and mix well. Stir in 1/2 cup of water and let it simmer for 5 minutes, or until the sauce thickens slightly.

Prepare Tortillas
While the meat is cooking, warm the corn tortillas in a separate skillet over low heat for about 30 seconds on each side, until pliable.
Assembling the Tacos

Fill the Tortillas
Take one warm tortilla and place about 2-3 tablespoons of the seasoned meat mixture in the center.

Add Cheese
Sprinkle a tablespoon of shredded cheese over the meat.

Roll the Taco
Roll the tortilla tightly around the filling and place seam-side down on a baking tray. Repeat with the remaining tortillas.
Cooking the Tacos

Bake the Rolled Tacos
Preheat the oven to 400°F (200°C). Place the baking tray in the oven and bake for 15-20 minutes, or until the tortillas are crispy and the cheese is melted.

Serve with Condiments
Remove the rolled tacos from the oven and let cool for a couple of minutes. Serve with guacamole, sour cream, chopped cilantro, and sliced jalapeños on the side.
