Prepare the Ingredients
Ensure all ingredients are chopped and ready before cooking. This includes dicing the carrots, peeling and deveining the shrimp, chopping the BBQ pork, and slicing the green onions.

Cook the Eggs
In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium heat. Beat the eggs in a bowl and pour them into the skillet. Scramble the eggs until fully cooked, then remove them from the skillet and set aside.

Stir-Fry Shrimp
In the same skillet, add another tablespoon of vegetable oil. Once hot, add the peeled and deveined shrimp. Stir-fry for about 2-3 minutes until the shrimp are pink and opaque. Remove shrimp from the skillet and set aside.

Combine Rice and Seasoning
Add the cooked white rice to the skillet, breaking up any clumps. Pour in the soy sauce, oyster sauce, sesame oil, and sprinkle with salt and pepper. Stir well to combine all ingredients.

Add Eggs and Shrimp
Return the scrambled eggs and cooked shrimp to the skillet. Add the sliced green onions and stir-fry everything together for another 2-3 minutes, ensuring everything is heated through.

Serve the Fried Rice
Once everything is well mixed and heated, remove from heat. Serve the Yang Chow Fried Rice hot, garnished with additional green onions if desired.
