Broth Preparation

Prepare the Broth
In a large pot, combine the chicken broth, sliced ginger, minced garlic, soy sauce, sesame oil, salt, and pepper. Bring the mixture to a gentle boil over medium heat.

Simmer
Once boiling, reduce the heat to low and let the broth simmer for about 15-20 minutes to allow the flavors to meld. Then, strain the broth to remove ginger and garlic pieces, if desired.

Make the Filling
In a bowl, combine the ground pork, chopped shrimp, green onion, soy sauce, cornstarch, salt, and pepper. Mix well until all ingredients are fully incorporated.

Fill the Wrappers
Place a wonton wrapper on a clean surface. Add about 1 teaspoon of the filling mixture to the center of the wrapper. Moisten the edges with water, fold the wrapper over to form a triangle, then pinch the edges to seal. Fold the two corners of the triangle towards each other to form a wonton shape. Repeat with remaining wrappers and filling.

Cook the Wontons
Bring the broth back to a gentle boil. Carefully add the wontons to the broth. Cook for about 5-7 minutes or until the wontons float to the surface and are cooked through.

Ladle the wontons and broth into bowls. Garnish with chopped fresh scallions and serve hot.
