Broth Preparation

    Prepare the Broth

    In a large pot, combine the chicken stock, soy sauce, sesame oil, sliced ginger, crushed garlic, and chopped green onions. Bring to a boil over medium-high heat.

    Simmer

    Once boiling, reduce the heat to low and let the broth simmer for about 20 minutes. Season with salt and black pepper to taste.

Dumpling Filling

    Prepare the Filling

    In a mixing bowl, combine the ground pork, chopped shrimp, minced garlic, finely chopped green onions, soy sauce, cornstarch, and salt. Mix well until all ingredients are evenly combined.

    Fill the Wontons

    Place a wonton wrapper on a clean surface. Spoon about 1 teaspoon of the filling into the center of the wrapper. Moisten the edges with water, fold the wrapper over the filling to form a triangle, and press to seal. You can also make a pouch shape by bringing the corners together and pinching them to seal. Repeat with remaining wrappers and filling.

Cooking Noodles and Dumplings

    Cook the Noodles

    In a separate pot, bring water to a boil. Add the egg noodles and cook according to package instructions until al dente. Drain and set aside.

    Cook the Dumplings

    In the simmering broth, gently add the dumplings. Cook for about 5-7 minutes, or until they float to the top and are cooked through.

Assembly

    Assemble the Dish

    In serving bowls, place a portion of the cooked noodles. Ladle the hot broth with dumplings over the noodles. Garnish with fresh cilantro and drizzle with chili oil to taste.
