Dumpling Wrapper Preparation

Make the Dough
In a large bowl, combine the all-purpose flour and salt. Gradually add water while mixing to form a dough.

Knead the Dough
Knead the dough on a lightly floured surface for about 5-7 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.
Filling Preparation

Mix the Filling
In a bowl, combine ground pork, minced shrimp, chopped green onions, minced garlic, soy sauce, sesame oil, salt, and black pepper. Mix well until fully combined.
Wonton Assembly

Roll the Dough
After resting, divide the dough into small balls (about the size of a golf ball). Roll out each ball into a thin circle, about 3 inches in diameter.

Fill the Wrappers
Place about 1 teaspoon of filling in the center of each wrapper. Moisten the edges with water and fold the dough over the filling to create a half-moon shape. Pinch the edges to seal tightly.
Cooking the Wontons

Steam the Wontons
Place the filled wontons in a steamer basket lined with parchment paper. Steam over boiling water for about 8-10 minutes or until the filling is cooked through.

In a small bowl, whisk together soy sauce, rice vinegar, chili oil, and sesame seeds. Adjust seasoning to taste.
