Sweet Corn Soup Recipe
Soup made by dropping beaten egg into boiling, thicken and seasoned chicken broth with Sweet Corn in it. Garnished with chopped fresh scallion.

Soup Preparation

Prepare the Broth
In a large pot, bring the chicken broth to a boil over medium-high heat.

Add Corn
Once the broth is boiling, add the sweet corn kernels and stir. Allow to simmer for about 5 minutes.

Thicken the Soup
In a small bowl, mix the cornstarch with water until smooth. Gradually add this mixture to the simmering broth while stirring continuously. Continue to cook until the soup thickens, about 2-3 minutes.

Add Eggs to Soup
Reduce the heat to low. Slowly pour the beaten eggs into the soup in a steady stream while gently stirring the soup. This will create ribbons of egg in the soup.

Season the Soup
Season with salt and black pepper to taste. Stir to combine and let it cook for an additional minute.

Prepare the Scallions
While the soup is cooking, finely chop the fresh scallions.

Ladle the hot sweet corn soup into bowls and garnish with chopped scallions. Serve immediately.
