Prepare the Chicken
Cut the chicken breasts into bite-sized pieces. Season with salt and black pepper.

Cook the Chicken
In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the seasoned chicken pieces and cook until they are golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

Prepare the Sauce
In a medium bowl, combine the brown sugar, white vinegar, ketchup, soy sauce, cornstarch, and water. Whisk until the mixture is smooth and the cornstarch is fully dissolved.

Cook the Sauce
In the same skillet used for the chicken, pour in the sauce mixture. Bring it to a simmer over medium heat, stirring continuously until it thickens, about 3-5 minutes.
Combining Ingredients

Add Vegetables and Chicken
Once the sauce has thickened, add the diced bell pepper, onion, and pineapple chunks. Stir to combine and cook for an additional 2-3 minutes until the vegetables are slightly tender.

Return the cooked chicken to the skillet, stirring to coat all the ingredients in the sauce. Cook for another 2 minutes until everything is heated through.
