Dumpling Wrapper Preparation

    Mix the Dough

    In a mixing bowl, combine the all-purpose flour and salt. Gradually add water while stirring until a dough forms. Knead the dough on a floured surface for about 5 minutes until smooth.

    Rest the Dough

    Cover the dough with a damp cloth and let it rest for 30 minutes. This will help relax the gluten.

    Roll the Dough

    After resting, divide the dough into small balls (about the size of a walnut). Roll each ball into a thin circle, approximately 3 inches in diameter.

Filling Preparation

    Prepare the Filling

    In a bowl, combine the ground pork, chopped shrimp, finely chopped green onions, soy sauce, sesame oil, minced ginger, black pepper, and water. Mix well until all ingredients are evenly combined.

Assembly and Cooking

    Fill the Dumplings

    Place a spoonful of filling in the center of each dumpling wrapper. Gather the edges of the wrapper and pinch them together to seal, forming a pleated shape.

    Prepare the Steamer

    Fill a steamer pot with water and bring it to a boil. Line the steamer basket with parchment paper or cabbage leaves to prevent sticking.

    Steam the Dumplings

    Place the shumai in the steamer basket, making sure they do not touch each other. Cover and steam for about 15 minutes, or until the filling is cooked through.
