Prepare the Shrimp

    Clean the Shrimp

    Peel and devein the large shrimp, removing the shell and the intestinal tract. Rinse under cold water and pat dry with paper towels.

Make the Batter

    Combine Dry Ingredients

    In a large bowl, whisk together the all-purpose flour, cornstarch, baking powder, and salt until well mixed.

    Add Cold Water

    Gradually add the cold water to the dry ingredients, mixing gently until just combined. The batter should be lumpy, do not overmix.

Fry the Shrimp

    Heat the Oil

    In a deep frying pan or wok, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Batter the Shrimp

    Dip each shrimp into the batter, making sure they are well coated.

    Fry the Shrimp

    Carefully place the battered shrimp in the hot oil, frying them in batches to avoid overcrowding. Fry for about 2-3 minutes or until golden brown and crispy.

    Drain the Shrimp

    Remove the shrimp with a slotted spoon and transfer them to a plate lined with paper towels to drain excess oil.

Prepare the Dipping Sauce

    In a small bowl, combine soy sauce, rice vinegar, mirin, and grated daikon (if using), mixing well.
