Marinating the Shrimp

    Prepare the Shrimp

    In a mixing bowl, combine the large shrimp, salt, pepper, garlic powder, and lemon juice. Toss until the shrimp are well-coated in the marinade. Cover and let it marinate in the refrigerator for at least 30 minutes.

Making the Tempura Batter

    Prepare the Batter

    In a separate bowl, mix together the all-purpose flour, cornstarch, and baking soda. Gradually add the cold water while stirring gently until just combined. Be careful not to overmix; the batter should be lumpy. Add ice cubes to keep the batter cold.

Frying the Shrimp

    Heat the Oil

    In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Batter the Shrimp

    Remove the shrimp from the marinade and dip each shrimp into the tempura batter, allowing excess batter to drip off.

    Fry the Shrimp

    Carefully place the battered shrimp into the hot oil in batches, making sure not to overcrowd the pan. Fry them for about 2-3 minutes or until they turn golden brown and crispy.

    Drain and Serve

    Using a slotted spoon, remove the shrimp from the oil and place them on a plate lined with paper towels to drain excess oil. Serve hot with dipping sauce.
