    Cook the Shrimp

    In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the shrimp and season with salt and black pepper. Cook for 3-4 minutes until the shrimp turn pink and opaque. Remove the shrimp from the skillet and set aside.

    Scramble the Eggs

    In the same skillet, add another tablespoon of vegetable oil. Pour in the beaten eggs and scramble until just set. This should take about 1-2 minutes. Remove the eggs from the skillet and set aside with the shrimp.

    Stir-fry the Aromatics

    Add the remaining tablespoon of vegetable oil to the skillet. Add minced garlic and sauté for about 30 seconds until fragrant.

    Combine the Ingredients

    Add the cooked rice to the skillet with the garlic. Stir well to combine and break up any clumps. Pour in the soy sauce and oyster sauce, stirring to evenly coat the rice.

    Finish the Dish

    Add the cooked shrimp and scrambled eggs back to the skillet. Stir everything together for another 2-3 minutes until heated through. Adjust seasoning with more salt and pepper if needed.

    Garnish and Serve

    Remove from heat and stir in the chopped green onions. Serve hot, garnished with additional scallions if desired.
