Preparing the Broth

    Combine Broth Ingredients

    In a large pot, combine the chicken or vegetable broth, water, soy sauce, rice vinegar, and chili paste. Bring to a boil over medium-high heat.

    Thicken the Broth

    In a small bowl, mix the cornstarch with a couple of tablespoons of cold water to create a slurry. Gradually add this slurry to the boiling broth while stirring continuously until the broth thickens. Season with salt and white pepper to taste.

Cooking the Soup

    Add Main Ingredients

    Reduce the heat to medium and add the ground pork, shrimp, sliced mushrooms, and cubed tofu to the pot. Stir gently and let it cook for about 5-7 minutes, or until the shrimp turn pink and the pork is cooked through.

    Add Eggs

    Slowly drizzle the beaten eggs into the pot while gently stirring the soup to create egg ribbons. Cook for an additional 2-3 minutes.

    Adjust Seasoning

    Taste the soup and adjust seasoning if necessary, adding more soy sauce, vinegar, or chili paste according to your preference.

Serving

    Ladle the hot and sour soup into bowls and garnish with chopped scallions. Serve immediately while hot.
