    Prepare Chicken

    Using a sharp knife, cut the chicken thighs into approximately 1-inch pieces.

    Coat Chicken

    In a mixing bowl, add cornstarch, salt, and black pepper. Mix well to combine.

    Add the chicken pieces to the bowl and toss them in the cornstarch mixture until fully coated.

    Heat Oil

    In a large, deep skillet or wok, heat the vegetable oil over medium-high heat until shimmering.

    Fry Chicken

    Carefully add the coated chicken pieces to the hot oil in batches. Fry for about 4-5 minutes, or until golden brown and crispy. Remove and drain on paper towels.

Sauce Preparation

    Mix Sauce Ingredients

    In a small saucepan over medium heat, whisk together soy sauce, rice vinegar, sugar, sesame oil, minced garlic, minced ginger, and red pepper flakes until well combined.

    Prepare Slurry

    In a separate small bowl, combine the cornstarch and water, stirring until smooth to create a slurry.

    Thicken Sauce

    Add the cornstarch slurry to the saucepan with the sauce mixture. Stir continuously and simmer for 2-3 minutes, or until the sauce thickens.

    Set Sauce Aside

    Once thickened, remove the saucepan from the heat and set the sauce aside until ready to use.

Combining and Serving

    Combine Chicken and Sauce

    In a large mixing bowl, add the fried chicken pieces. Pour the prepared sauce over the chicken, tossing to coat evenly.

    Sprinkle sliced green onions and sesame seeds over the chicken and sauce mixture.

    Serve the General Tso chicken immediately while hot, accompanied by steamed rice or noodles if desired.
