Preparation of Chicken Katsu

    Prepare the Chicken

    Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness of about 1/2 inch using a meat mallet.

    Season the Chicken

    Sprinkle both sides of the chicken with salt and black pepper, ensuring they are evenly seasoned.

    Bread the Chicken

    Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with panko breadcrumbs. Dip each piece of chicken first into the flour, shaking off excess, then into the eggs, and finally into the panko, pressing gently to adhere.

Cooking the Chicken

    Heat the Oil

    In a large skillet, heat vegetable oil over medium-high heat until shimmering.

    Fry the Chicken

    Carefully add the breaded chicken to the skillet, cooking for about 4-5 minutes on each side, or until golden brown and cooked through. Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C).

    Once cooked, transfer the chicken to a plate lined with paper towels to drain excess oil.

    Slice the chicken katsu into strips and serve with shredded cabbage on the side.
