Marinating Chicken

    Prepare Chicken

    Cut chicken thighs into bite-sized pieces and place them in a bowl.

    Mix Marinade

    In a separate bowl, combine soy sauce, sake, mirin, minced garlic, grated ginger, salt, and black pepper.

    Marinate

    Pour the marinade over the chicken pieces, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.

Preparing the Batter

    Combine Dry Ingredients

    In a large bowl, mix together all-purpose flour, cornstarch, and baking powder.

    Make Batter

    In another bowl, whisk the egg and water together, then gradually add the egg mixture to the dry ingredients until a smooth batter forms.

Frying the Chicken

    Heat Oil

    In a deep frying pan or pot, heat vegetable oil over medium-high heat until it reaches 170°C (340°F).

    Coat Chicken

    Remove marinated chicken from the refrigerator. Dip each piece into the batter, then carefully place into the hot oil.

    Fry the chicken in batches, making sure not to overcrowd the pan. Cook for about 5-7 minutes or until golden brown and cooked through. Use a slotted spoon to transfer the chicken to a plate lined with paper towels to drain excess oil.
