Prepare the Ingredients
Ensure that the cooked rice is cooled to prevent clumping. Dice the chicken breast, chop the onion, and dice the carrot into small pieces. Mince the garlic.

Cook the Chicken
In a large frying pan or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Add the diced chicken and stir-fry until fully cooked and no longer pink, about 5-7 minutes. Remove the chicken from the pan and set aside.

Sauté Vegetables
In the same pan, add 1 tablespoon of vegetable oil. Add the minced garlic and chopped onion, sautéing until fragrant and translucent, about 2-3 minutes. Then, add the diced carrots and green peas, stir-frying for another 3-4 minutes.

Fry the Rice
Add the cooked rice to the pan, breaking up any clumps. Stir in the cooked chicken, soy sauce, sweet soy sauce, salt, and pepper. Mix well and fry for another 5 minutes, stirring constantly to ensure everything is well combined and heated through.
