Chicken Fried Noodle (mie Goreng) Recipe

Preparation

    Cook the Noodles

    Bring 500 ml of water to a boil in a large pot. Add 200 g of egg noodles and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Chicken

    While the noodles are cooking, slice 300 g of chicken breast into thin strips. Set aside.

    Chop the Vegetables

    Julienne 1 carrot, shred 100 g of cabbage, and chop 3 green onions into small pieces. Mince 3 cloves of garlic.

    Stir-fry the Chicken

    In a large frying pan or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Add the sliced chicken and stir-fry for 5-7 minutes until cooked through. Remove from the pan and set aside.

    Stir-fry the Vegetables

    In the same pan, add a bit more oil if needed. Add the minced garlic and stir-fry for 30 seconds until fragrant. Then add the julienned carrot and shredded cabbage. Stir-fry for another 3-4 minutes until the vegetables are tender.

    Combine Ingredients

    Return the cooked chicken to the pan with the vegetables. Add the cooked noodles.

    Add the Sauce

    In a small bowl, mix together 3 tablespoons of soy sauce, 2 tablespoons of oyster sauce, 1 tablespoon of sweet soy sauce, 1 tablespoon of sesame oil, and 1 teaspoon of chili sauce. Pour this sauce over the noodle and chicken mixture and toss everything together until well coated and heated through.

Serving

    Garnish and Serve

    Divide the chicken fried noodles into serving plates. Top with 2 tablespoons of fried shallots and serve with lime wedges on the side.
