    Prep the Beef

    Slice the beef into thin strips against the grain. This helps to tenderize the meat.

    Dice the carrots, chop the onion, and mince the garlic. Set all aside. Measure out the frozen peas.

    If you don't have day-old rice, cook fresh rice and let it cool completely before using. This prevents it from becoming mushy.

    In a large skillet or wok over medium-high heat, add 1 tablespoon of oil. Once hot, add the sliced beef and stir-fry for about 3-4 minutes until browned and cooked through. Remove from the skillet and set aside.

    In the same skillet, push the beef to the side or remove it completely. Crack the eggs into the skillet and scramble them until fully cooked. Remove and set aside with the beef.

    Add the cooked rice to the skillet. Pour in the soy sauce, oyster sauce, sesame oil, salt, and black pepper. Stir everything together and cook for about 3-5 minutes, allowing the rice to heat through and absorb the flavors.

    Add the cooked beef and scrambled eggs back into the skillet. Toss everything together for an additional minute to combine well. Garnish with sliced green onions before serving.
