Prepare the Noodles
Soak the rice noodles in warm water for about 20 minutes or until they soften. Drain and set aside.

Marinate the Chicken
In a bowl, combine the sliced chicken with 1 tablespoon of soy sauce, 1 tablespoon of oyster sauce, black pepper, and a pinch of salt. Let it marinate for about 15 minutes.

Stir-fry the Chicken
In a large wok or frying pan, heat 2 tablespoons of cooking oil over medium-high heat. Add the marinated chicken and stir-fry for about 5-7 minutes or until fully cooked. Remove the chicken and set aside.

Combine Noodles and Sauce
Add the soaked rice noodles to the wok along with the remaining soy sauce and oyster sauce. Pour in the water. Stir well to combine all ingredients. Cook for another 3-5 minutes, allowing the noodles to absorb the flavors.

Finish with Chicken
Add the cooked chicken back into the wok. Drizzle with sesame oil and give everything a good toss. Adjust seasoning with salt if needed.

Transfer the Bee Hon Goreng Chicken to plates and garnish with fried shallots. Serve hot.
