Prepare the Noodles

    Cook the Lo Mein Noodles

    Bring a large pot of salted water to a boil. Add the lo mein noodles and cook according to package instructions until al dente. Drain and set aside.

Prepare the Mushroom Mixture

    Sauté the Aromatics

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and diced shallot, and sauté until fragrant and translucent, about 2-3 minutes.

    Add the Mushrooms

    Increase the heat to medium-high, add the wild mushrooms, and sauté for about 5-7 minutes, or until they are tender and browned.

    Deglaze with Sake

    Pour in the sake to deglaze the pan, scraping up any browned bits. Cook until the sake has reduced by half.

    Add Cream and Cheese

    Reduce the heat to medium-low, then add the heavy cream and grated Parmesan cheese. Stir until the cheese has melted and the sauce is smooth. Season with salt and black pepper to taste.

Combine and Serve

    Combine Noodles and Sauce

    Add the cooked lo mein noodles to the skillet with the mushroom sauce. Toss to coat the noodles evenly with the sauce.

    Plate the lo mein and garnish with shaved black truffle and sliced green onions. Serve immediately.
