Prepare Lobster Filling

1. Mix Ingredients

In a medium bowl, combine the chopped lobster meat, mayonnaise, Sriracha sauce, lemon juice, chopped green onions, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

Cook Quinoa

2. Rinse Quinoa

Rinse the quinoa under cold water to remove any bitterness. Drain well.

3. Cook Quinoa

In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil, then reduce to a simmer. Cover and cook for about 15 minutes or until the quinoa is fluffy and all water is absorbed. Remove from heat and let it sit covered for 5 minutes.

4. Fluff and Cool

Fluff the quinoa with a fork and let it cool slightly.

5. Heat Oil

In a non-stick skillet, heat the olive oil over medium heat.

6. Add Quinoa

Once the oil is hot, add the cooked quinoa to the skillet. Spread it out evenly and let it cook undisturbed for about 5-7 minutes until it turns golden brown and crispy.

7. Stir Occasionally

Stir the quinoa occasionally to ensure even cooking and crisping. Once crispy, remove from heat.

Assemble the Dish

8. Layer Lobster Filling

Take the crispy quinoa and layer the lobster filling on top.

9. Garnish

Sprinkle chopped scallions and sesame seeds on top for garnish.
