Prepare Lobster Filling
1. Mix Ingredients
In a medium bowl, combine the chopped lobster meat, mayonnaise, Sriracha sauce, lemon juice, chopped green onions, salt, and black pepper. Mix well until all ingredients are evenly incorporated.
Cook Quinoa

Rinse the quinoa under cold water to remove any bitterness. Drain well.

In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil, then reduce to a simmer. Cover and cook for about 15 minutes or until the quinoa is fluffy and all water is absorbed. Remove from heat and let it sit covered for 5 minutes.
4. Fluff and Cool
Fluff the quinoa with a fork and let it cool slightly.

Stir the quinoa occasionally to ensure even cooking and crisping. Once crispy, remove from heat.
