Prepare the Mochi Dough

1. Mix the Ingredients

In a large mixing bowl, combine 1 cup of sweet rice flour, 1 cup of water, and 2 tablespoons of sugar. Stir until the mixture is smooth and fully combined.

2. Steam the Mixture

Pour the mochi mixture into a heatproof dish and place it in a steamer. Steam the mixture for 20-25 minutes, until it becomes translucent and slightly sticky.

3. Cool the Dough

Once cooked, carefully remove the dish from the steamer and let the mochi dough cool for about 10 minutes.

4. Dust with Cornstarch

Sprinkle 1 tablespoon of cornstarch on a clean surface. Transfer the mochi dough onto the surface and dust the top with additional cornstarch to prevent sticking.

5. Knead the Dough

Gently knead the mochi dough for a few minutes until it becomes smooth and pliable.

Fill the Mochi

6. Prepare Ice Cream

Scoop your choice of ice cream (about 2 cups total) into small balls using a cookie scoop or spoon. Place them on a baking sheet lined with parchment paper and freeze for about 30 minutes until firm.

7. Shape the Mochi

Take a small piece of mochi dough (about 1-2 tablespoons) and flatten it into a disc shape with your hands. Make sure it's large enough to wrap around the ice cream ball.

8. Wrap the Ice Cream

Place a frozen ice cream ball in the center of the mochi disc. Carefully fold the edges of the dough over the ice cream, pinching to seal it completely. Ensure there are no gaps.

9. Repeat

Repeat with the remaining mochi dough and ice cream until all are filled.

Serve

10. Dust with Powdered Sugar

If desired, dust the filled mochi with powdered sugar to prevent sticking and add sweetness.

11. Enjoy

Serve the mochi immediately or store them in an airtight container in the freezer until ready to eat.
