Main Ingredients

Seasonal Vegetables

Method

Preparing the Marinade

  1. 1

    Make the Marinade

In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, and black pepper to create a marinade.

  2. 2

    Marinate the Salmon

Place the salmon fillets in a shallow dish and pour the marinade over them. Let it marinate for at least 30 minutes in the refrigerator.

Preparing the Vegetables

  1. 3

    Prepare Vegetables

While the salmon is marinating, prepare the seasonal vegetables by slicing the zucchini, chopping the bell pepper, and trimming the asparagus.

  2. 4

    Season the Vegetables

In a large bowl, toss the prepared vegetables with olive oil, salt, and black pepper until evenly coated.

Grilling

  1. 5

    Preheat the Grill

Preheat your grill to medium-high heat (about 400-450°F or 200-230°C).

  2. 6

    Grill the Salmon

Remove the salmon from the marinade and place it skin-side down on the grill. Cook for about 6-8 minutes on each side, or until the salmon flakes easily with a fork.

  3. 7

    Grill the Vegetables

While the salmon is grilling, place the seasoned vegetables directly on the grill or in a grill basket. Grill for about 5-7 minutes, or until the vegetables are tender and slightly charred.

Serving

  1. 8

    Plate the Dish

Once cooked, remove the salmon and vegetables from the grill. Serve the grilled salmon alongside the seasonal vegetables on a large platter.

  2. 9

    Garnish (optional)

Garnish with fresh herbs or lemon wedges if desired before serving.
