Steak Preparation

    Season the Steak

    Rub the wagyu skirt steak with olive oil, salt, and black pepper. Make sure the steak is evenly coated.

    Cook the Steak

    Heat a grill or skillet over medium-high heat. Cook the steak for about 4-5 minutes on each side or until it reaches your desired doneness. Remove from heat and let rest for 5 minutes.

    Slice the Steak

    After resting, slice the steak against the grain into thin strips.

Pickled Red Onion

    Prepare the Pickling Liquid

    In a small saucepan, combine apple cider vinegar, water, sugar, and salt. Heat over medium heat until the sugar and salt are dissolved.

    Pickle the Onion

    Slice the red onion thinly and place it in a jar. Pour the pickling liquid over the onions and let cool to room temperature. Refrigerate for at least 30 minutes, or up to 24 hours for more flavor.

Aji Amarillo Sauce

    Mix the Sauce

    In a bowl, combine aji amarillo paste, sour cream, and lime juice. Mix well until smooth. Adjust seasoning if necessary.

Taco Assembly

    Warm the Tortillas

    Heat corn tortillas on a skillet or in a microwave until warm.

    Assemble the Tacos

    Place a few slices of skirt steak on each tortilla. Top with pickled red onions, a drizzle of aji amarillo sauce, and a sprinkle of cilantro.

    Serve

    Serve tacos with lime wedges on the side for squeezing over the top.
