Wagyu Beef

Method

Preparing the Wagyu Beef

  1. 1

    Season the Beef

Sprinkle the Wagyu beef steak generously with salt and freshly ground black pepper on both sides. Let it sit at room temperature for 30 minutes to allow the flavors to penetrate.

  2. 2

    Sear the Beef

In a large skillet or grill pan, heat the olive oil over medium-high heat. Once hot, add the seasoned Wagyu beef steak. Sear for about 3-4 minutes on each side for medium-rare, depending on the thickness of the steak. Adjust the time to your preferred doneness.

  3. 3

    Rest the Beef

Remove the steak from the heat and let it rest for about 5-10 minutes. This helps the juices redistribute throughout the meat for a more flavorful bite.

Making the Chili Ponzu Sauce

  1. 4

    Combine Ingredients

In a bowl, combine the soy sauce, yuzu juice (or lemon juice), rice vinegar, chili flakes, and sesame oil. Mix well until all ingredients are fully incorporated.

  2. 5

    Garnish with Green Onions

Stir in the finely chopped green onions into the sauce, mixing them evenly throughout.

Serving

  1. 6

    Slice and Serve

Slice the rested Wagyu beef against the grain into thin strips. Arrange on a serving plate and drizzle generously with the chili ponzu sauce. Serve immediately.
