Prepare the Potatoes
Wash and peel the potato. Cut it into matchstick-sized strips. Soak the strips in cold water for 30 minutes to remove excess starch.

Prepare the Seasoning
In a small bowl, combine Szechuan peppercorns, salt, black pepper, and chili flakes. Set aside.

Cook the Steak
In a large skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Once hot, add the steak and cook for 4-5 minutes on each side for medium-rare, or longer if desired. Remove from the skillet and let it rest for 5 minutes.

Fry the Potatoes
While the steak is resting, drain the soaked potatoes and pat them dry. In the same skillet, add another tablespoon of vegetable oil. Once the oil is hot, add the matchstick potatoes and fry until golden brown and crispy, about 5-7 minutes. Stir occasionally.

Serve the Dish
Slice the rested NY Strip Steak against the grain. Arrange the crispy matchstick potatoes on a plate, place the sliced steak on top, and garnish with sliced green onions and sesame seeds if desired.
