Prepare Salmon

Season and Cook the Salmon
Preheat the oven to 400°F (200°C). Season the salmon fillets with salt and black pepper. Heat olive oil in an oven-safe skillet over medium-high heat. Once hot, sear the salmon for 2-3 minutes on each side until golden brown. Transfer the skillet to the preheated oven and bake for 10-12 minutes or until the salmon flakes easily with a fork.

In a bowl, mix together the mayonnaise and Sriracha sauce until well combined. Adjust the spice level by adding more Sriracha if desired.

Build the Tacos
Warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side until pliable. Flake the cooked salmon and place a portion on each tortilla. Top with a spoonful of spicy mayo, sliced avocado, a drizzle of truffle oil, and eel sauce. Serve immediately.
