Coleslaw Preparation

In a large mixing bowl, combine the shredded green cabbage and shredded carrots.

In a separate bowl, mix together the vegan mayo, apple cider vinegar, sugar, salt, and black pepper until smooth.

Combine the Coleslaw
Pour the dressing over the cabbage and carrots. Toss well to coat all the vegetables evenly. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.

Mix the Dressing
In a small bowl, whisk together the vegan mayo, ketchup, apple cider vinegar, Dijon mustard, garlic powder, and onion powder until well combined.
Assembly

Layer the Ingredients
On each slice of plant-based turkey, place a slice of provolone cheese, followed by a generous scoop of coleslaw.

Spread a tablespoon of Russian dressing on top of the coleslaw. Optionally, add more vegan mayo for extra creaminess.
