Preparation of Filling

Mix the Filling
In a large mixing bowl, combine the ground pork, peeled and deveined shrimp, and tobiko. Mix well until all ingredients are evenly distributed.

Add Seasonings
Add soy sauce, sesame oil, minced garlic, minced ginger, salt, and black pepper to the mixture. Mix thoroughly until the filling is well incorporated.
Assembling Money Bags

Prepare Wonton Wrappers
Take a wonton wrapper and place it on a clean, dry surface. Spoon about 1 tablespoon of the filling mixture into the center of the wrapper.

Shape the Money Bag
Moisten the edges of the wonton wrapper with water. Gather the edges together and pinch them to form a 'money bag' shape, ensuring that the filling is sealed inside.

Repeat
Repeat the process for the remaining wonton wrappers and filling mixture until all are used.
Cooking

Steam the Money Bags
Place the assembled money bags in a steamer basket lined with parchment paper. Steam over boiling water for about 10 minutes or until the pork is fully cooked.

Garnish with Gold Leaf
Carefully remove the steamed money bags from the steamer. Use tweezers to delicately place a piece of gold leaf on top of each money bag for an elegant presentation.
