Sauté the Vegetables
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and mushrooms. Sauté for about 5-7 minutes until they are tender and slightly caramelized. Season with salt and black pepper.

Cook the Impossible Meat
Add the Impossible meat to the skillet with the sautéed vegetables. Cook for about 5-7 minutes, breaking it apart with a spatula, until it’s browned and heated through.

Melt the Cheese
Once the Impossible meat is cooked, lower the heat and place the slices of white American cheese on top of the meat mixture. Cover the skillet with a lid to allow the cheese to melt (about 2-3 minutes).

Assemble the Sandwiches
Slice the hoagie rolls lengthwise, leaving one side intact. Spoon the cheesy Impossible meat mixture into each roll. If desired, add hot or sweet peppers on top.
