Turkey Preparation

Preheat the Oven
Preheat your oven to 325°F (160°C).

Prepare the Turkey
Remove the turkey giblets and pat the turkey dry with paper towels. Rub olive oil all over the turkey, including under the skin.

Season the Turkey
In a small bowl, combine salt, black pepper, garlic powder, onion powder, and dried thyme. Rub this seasoning mixture evenly over the turkey.

Roast the Turkey
Place the turkey breast-side up in a roasting pan. Roast in the preheated oven for about 3 to 4 hours, or until the internal temperature reaches 165°F (75°C).

Rest the Turkey
Once cooked, remove the turkey from the oven and let it rest for at least 30 minutes before pulling the meat.

Pull the Turkey
Using two forks, shred the turkey meat into bite-sized pieces.

Prepare the Bread
Slice the fresh bread rolls or baguette in half lengthwise.

Assemble the Sandwich
On the bottom half of each roll, layer the pulled turkey, followed by a slice of provolone cheese, lettuce leaves, tomato slices, onion slices, and a generous spread of mayonnaise on the top half.

Close the sandwich and press down gently. Cut in half if desired and serve immediately.
