Method

Hamachi Preparation

  1. 1

    Slice Hamachi

Begin by slicing the hamachi into thin sashimi-style pieces, about 1/4 inch thick. Arrange them neatly on a serving plate.

  2. 2

    Prepare Jalapeño

Finely slice the jalapeño pepper into thin rounds. If you prefer less heat, remove the seeds before slicing.

  3. 3

    Season with Sea Salt

Sprinkle a pinch of sea salt over the sliced hamachi and jalapeño for seasoning.

Citrus Vinaigrette

  1. 4

    Mix Citrus

In a small bowl, combine fresh lime juice, fresh lemon juice, and honey. Whisk them together until the honey is fully dissolved.

  2. 5

    Emulsify Vinaigrette

Slowly drizzle in the olive oil while whisking continuously to emulsify the vinaigrette.

  3. 6

    Season Vinaigrette

Season with salt and black pepper to taste. Adjust the seasoning as needed.

Garlic Chip

  1. 7

    Slice Garlic

Thinly slice the garlic cloves using a mandoline or a sharp knife.

  2. 8

    Heat Oil

In a small saucepan, heat the vegetable oil over medium heat. Once hot, carefully add the sliced garlic.

  3. 9

    Fry Garlic

Fry the garlic slices until they turn golden brown and crispy, about 2-3 minutes. Stir occasionally to ensure even cooking.

  4. 10

    Drain Garlic Chips

Using a slotted spoon, transfer the garlic chips to a paper towel-lined plate to drain excess oil.
