Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into long, even strips (about 1/4 inch thick) to ensure even cooking.

Soak the Potatoes
Place the cut potato strips in a large bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch, resulting in crispier fries.
Frying

Heat the Oil
In a large, deep pot or fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

Dry the Potatoes
After soaking, drain the potatoes and pat them dry with paper towels to remove excess moisture.

Fry the Potatoes
Carefully add a handful of dried potato strips to the hot oil. Avoid overcrowding the pot. Fry for about 4-5 minutes or until golden brown and crispy.

Drain and Season
Using a slotted spoon, remove the fries from the oil and let them drain on paper towels. Immediately sprinkle them with the salt, garlic powder, paprika, and black pepper while they are still hot.
