Slow-Roasting the Turkey

Prepare the Turkey
Preheat your oven to 325°F (165°C). Rinse the turkey under cold water and pat dry with paper towels. Rub the entire turkey with olive oil, salt, black pepper, garlic powder, and onion powder. Stuff the cavity with lemon wedges and fresh herbs.

Rest the Turkey
Once done, remove the turkey from the oven and let it rest for at least 30 minutes before pulling the meat. This allows the juices to redistribute.
Making the Coleslaw

Mix Coleslaw Ingredients
In a large bowl, combine the shredded cabbage and carrot. In a separate bowl, mix the mayonnaise, apple cider vinegar, sugar, salt, and black pepper until smooth.

Combine and Chill
Pour the dressing over the cabbage mixture and toss until well combined. Cover and refrigerate for at least 1 hour to allow the flavors to meld.
Assembling the Sandwiches

Prepare the Sandwiches
Slice the sub rolls in half and spread mayonnaise on one side of each roll. Layer with sliced provolone cheese.

Add Turkey and Coleslaw
Once the turkey has rested, pull the meat into bite-sized pieces and layer generously on the cheese. Top with a scoop of coleslaw and drizzle with Russian dressing.

Close the sandwich and serve immediately or wrap in foil to keep warm.
