    Prepare the Vegetables

    Wash the snow peas and bean sprouts thoroughly. Cut the carrot into thin matchsticks.

    Cook the Rice

    If you haven't done so already, cook the rice according to package instructions and set it aside to cool.

    Stir-Fry the Vegetables

    In a large skillet or wok, heat a tablespoon of sesame oil over medium heat. Add the snow peas and carrot matchsticks, and stir-fry for 2-3 minutes until they start to soften. Add the bean sprouts and stir-fry for another minute. Season with salt and pepper to taste, then remove the vegetables from the skillet and set aside.

    Cook the Crab

    In the same skillet, add the blue crab meat and soy sauce. Cook for 2-3 minutes, stirring gently to combine with the soy sauce. Remove from heat and set aside.

    Fry the Eggs

    In a separate non-stick pan, heat a little oil over medium heat. Crack the eggs into the pan and fry them sunny-side up until the whites are set but the yolks are still runny.

    Combine Everything

    In a large bowl, combine the cooked rice, stir-fried vegetables, and crab mixture. Toss gently to combine all ingredients evenly.

Serving

    Plate the Dish

    Divide the rice, crab, and vegetable mixture among plates. Top each serving with a fried egg.

    Garnish and Serve

    Drizzle a little extra soy sauce over the top if desired, and serve hot.
