Prepare the Chicken
Preheat your grill to medium-high heat. Season the chicken breasts with salt and pepper. Grill the chicken for about 6-7 minutes per side or until fully cooked (internal temperature should reach 165°F/75°C). Brush the chicken with BBQ sauce during the last few minutes of grilling for added flavor.

Let Chicken Rest
Once grilled, remove the chicken from the grill and let it rest for 5 minutes before slicing it into strips.
Assembling the Tray

Prepare the Salad Base
In a large serving tray, layer the mixed greens evenly as the base.

Add Toppings
Spread the diced tomatoes, corn, and black beans over the mixed greens.

Add Chicken
Arrange the sliced BBQ chicken on top of the salad base and toppings.

Finish with Crispy Onions and Dressing
Sprinkle the crispy cheddar onions over the chicken. Drizzle chipotle ranch dressing on top or serve on the side.
