Dough Preparation

    Mix Flour and Salt

    In a large bowl, combine the all-purpose flour and salt. Mix well.

    Add Boiling Water

    Slowly add boiling water to the flour mixture while stirring with chopsticks or a fork until a dough begins to form.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

    Combine Filling Ingredients

    In a bowl, combine ground pork, chopped cabbage, grated carrot, green onion, minced garlic, grated ginger, soy sauce, sesame oil, salt, and pepper. Mix until well combined.

Assembly

    Roll Out Dough

    After resting, divide the dough into small pieces. Roll each piece into a thin circle, about 3 inches in diameter.

    Fill Dumplings

    Place about 1 tablespoon of the filling in the center of each dough circle. Moisten the edges with water, fold the dough over the filling, and pinch to seal.

Cooking

    Pan-Fry Gyoza

    In a large skillet, heat vegetable oil over medium-high heat. Place the dumplings in the skillet and cook until the bottoms are golden brown, about 3-4 minutes.

    Add Water and Steam

    Carefully add water to the skillet (it will splatter) and cover immediately. Let steam for about 5-7 minutes or until the water has evaporated.

    Serve

    Remove the lid and let the dumplings cook for another minute to crisp up the bottom. Serve hot with soy sauce or dipping sauce.
