Method

Preparing the Salmon

  1. 1

    Marinate the Salmon

In a bowl, mix together olive oil, lemon juice, minced garlic, salt, black pepper, and chopped fresh dill. Add the salmon fillets to the bowl, ensuring they are well-coated with the marinade. Cover and refrigerate for at least 30 minutes.

  2. 2

    Preheat the Grill

Preheat your grill to medium-high heat.

  3. 3

    Grill the Salmon

Remove the salmon from the marinade and place it on the grill. Cook for about 5-7 minutes on each side, or until the salmon flakes easily with a fork.

Preparing the Seasonal Vegetables

  1. 4

    Chop the Vegetables

Slice the zucchini and bell pepper into thick strips. Trim the ends of the asparagus.

  2. 5

    Season the Vegetables

In a large bowl, toss the chopped vegetables with olive oil, salt, and black pepper until evenly coated.

  3. 6

    Grill the Vegetables

Place the vegetables on the grill alongside the salmon. Grill for about 5-8 minutes, turning occasionally until they are tender and have grill marks.

Cooking the Rice

  1. 7

    Rinse the Rice

Rinse the white rice under cold water until the water runs clear.

  2. 8

    Cook the Rice

In a saucepan, combine the rinsed rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes, or until the rice is tender and water is absorbed.

Serving

  1. 9

    Plate the Dish

On each plate, serve a portion of grilled salmon alongside a scoop of rice and a generous helping of grilled seasonal vegetables.

  2. 10

    Garnish and Enjoy

Optionally, garnish with additional fresh dill or lemon wedges before serving. Enjoy your grilled salmon with seasonal vegetables and rice!
