    Prepare the Ingredients

    Gather all the ingredients and ensure that the crabmeat and shrimp are properly cleaned and deveined.

    Sauté the Seafood

    In a skillet, melt the butter over medium heat. Add the shrimp and crabmeat, and sauté for about 3-4 minutes until cooked through. Season with Old Bay, salt, and pepper. Remove from heat and set aside.

    Whisk the Eggs

    In a bowl, whisk the eggs with a pinch of salt and pepper until fully combined.

    Cook the Omelette

    In the same skillet, pour in the egg mixture and cook over medium-low heat. Use a spatula to gently lift the edges as the eggs set, allowing uncooked egg to flow to the edges.

    Add Fillings

    Once the eggs are mostly set but still slightly runny on top, evenly distribute the sautéed seafood mixture, diced tomatoes, mozzarella, and cheddar cheese over one half of the omelette.

    Fold and Serve

    Carefully fold the other half of the omelette over the fillings. Cook for an additional minute or until the cheese melts. Slide the omelette onto a plate and serve hot.
