Cook the Steak
In a large skillet, heat olive oil over medium-high heat. Add the chopped steak, diced onion, and green bell pepper. Season with salt and black pepper. Cook until the steak is browned and cooked through, about 5-7 minutes. Remove from heat and let it cool slightly.

Mix the Filling
In a large bowl, combine the cooked steak mixture with Monterey Jack, cheddar, and mozzarella cheeses. Mix well to combine.

Roll the Egg Rolls
Lay an egg roll wrapper on a clean surface with one corner pointing towards you. Place 2-3 tablespoons of the filling in the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides and roll tightly. Seal the top corner with a dab of water. Repeat with remaining wrappers and filling.

Fry the Egg Rolls
In a deep frying pan, heat oil to 350°F (175°C). Carefully place 3-4 egg rolls in the hot oil and fry for about 3-4 minutes or until golden brown. Remove and drain on paper towels. Continue frying the remaining egg rolls.

Serve the cheesesteak egg rolls hot with chipotle aioli on the side for dipping.
