Pasta Preparation

Cook the Spaghettoni
Bring a large pot of salted water to a boil. Add the spaghettoni and cook according to package instructions until al dente. Reserve 1 cup of pasta cooking water, then drain the pasta.

Make the Ragu
In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sauté until translucent. Add the minced Wagyu and pork and cook until browned. Stir in the crushed tomatoes and Japanese curry powder, season with salt and pepper. Simmer on low heat for 20-30 minutes.

Prepare the Pangrattato
In a separate pan, heat olive oil over medium heat. Add breadcrumbs and cook until golden brown, stirring frequently. Mix in grated Parmesan, chili flakes, and chopped parsley, then remove from heat.
Final Assembly

Combine and Serve
Add the drained spaghettoni to the ragu and toss to combine, adding reserved pasta water as needed for consistency. Serve topped with spiced pangrattato.
