Prepare the Ham Hock

In a large pot, place the smoked ham hock and cover it with water. Bring to a boil, then reduce heat and simmer for about 1.5 to 2 hours until the meat is tender and falling off the bone. Remove the hock and set aside to cool.

Cook the Chickpeas

In a skillet, heat olive oil over medium heat. Add cooked chickpeas along with paprika, salt, black pepper, garlic powder, and caraway seeds. Sauté for about 5-7 minutes until the chickpeas are crisp and golden.

Prepare the Cabbage

While the chickpeas are cooking, grill the fermented cabbage on a grill pan over medium-high heat until charred and heated through, about 3-5 minutes.

Assemble the Dish

Shred the meat from the smoked ham hock and mix it with the sautéed chickpeas. Serve the mixture on a plate topped with the grilled fermented cabbage.
