Preparing the Kofta

Mixing the Ingredients
In a large bowl, combine the cooked chickpeas, grated zucchini, chopped onion, grated ginger, minced garlic, chopped cilantro, cumin powder, salt, chili powder, and all-purpose flour. Mix well until a dough forms.

Shaping the Kofta
With wet hands, take small portions of the mixture and shape them into small balls or patties.

Frying the Kofta
Heat oil in a deep frying pan over medium heat. Fry the koftas in batches until golden brown and crispy. Remove and drain on paper towels.
Preparing the Tomato Puree

Cooking the Sauce
In a saucepan, heat 1 tablespoon of oil over medium heat. Add minced garlic and grated ginger, sauté until fragrant.

Adding Tomatoes
Stir in the pureed tomatoes, cumin powder, salt, sugar, and water. Simmer for about 10 minutes until the sauce thickens.
Serving

Combining and Serving
Place the fried koftas in a serving dish and pour the tomato puree over them. Serve hot with rice or bread.
