Mixing the Ingredients
In a large mixing bowl, combine the shredded coconut, sweetened condensed milk, vanilla extract, and a pinch of salt. Mix until all ingredients are thoroughly combined.
Shaping the Medallions
Using your hands, form the mixture into small medallion shapes, approximately the size of a quarter. Place the formed medallions on a baking sheet lined with parchment paper.
Chilling
Refrigerate the medallions for about 30 minutes, or until they are firm.
Melting the Chocolate
While the medallions are chilling, melt the dark chocolate in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth.
Dipping
Once the medallions are firm, dip each medallion halfway into the melted chocolate and return them to the baking sheet.
Setting
Allow the chocolate to set at room temperature or refrigerate for quicker setting.
