Prepare the Lamb

Cut the lamb shoulder into large chunks and season with salt and black pepper. Set aside.

Heat the Ghee

In a large pot, heat the clarified butter (ghee) over medium heat until melted.

Sauté Aromatics

Add the chopped onion to the pot and sauté until golden brown. Stir in the minced garlic and grated ginger, cooking until fragrant.

Add Whole Spices

Add cumin seeds, coriander seeds, cardamom pods, cinnamon stick, and cloves to the pot. Cook for 2-3 minutes until the spices are fragrant.

Brown the Lamb

Add the seasoned lamb chunks to the pot and brown them on all sides for about 5-7 minutes.

Add Turmeric and Water

Stir in the turmeric powder and add water. Bring the mixture to a boil.

Braise the Lamb

Reduce heat to low, cover, and let it simmer for 1.5 to 2 hours, or until the lamb is tender and easily pulls apart.

Garnish and Serve

Once done, remove from heat and garnish with fresh chopped cilantro. Serve hot with rice or bread.
